Strawberry Salad with Yogurt Dressing

Ingredients

Dressing:

  • 2 tbsp. nonfat, plain yogurt

  • 2 medium-sized strawberries

  • 1 tsp. fresh lime juice

  • 1/2 tsp. lime zest

  • 1/2 tsp. honey

  • 1/4 tsp. Dijon mustard

  • 1/4 tsp. onion powder

  • 1/8 tsp. sea salt

  • 1/8 tsp. black pepper

Salad:

  • 1 cup mixed greens and/or baby spinach

  • 1/2 oz. red bell pepper, sliced

  • 1/2 oz. cucumber, sliced

  • 1 medium strawberry, sliced

  • 2 baby carrots, shredded

  • 1 tbsp. minced red onion

Directions

  1. Place all dressing ingredients in a blender. Blend until smooth or about 30 seconds.

  2. Toss all ingredients for salad together. Drizzle dressing on top.

Makes one serving. Serving contains about 80 calories, 0.4 g fat (0 g saturated fat, 0 g trans fat), 0.6 mg cholesterol, 390 mg sodium, 14.9 g carbohydrates, 9.7 g sugar, 2.5 g fiber, and 3 g protein.
